Chinese Yam
Have you ever seen a sticky, white looey paste used on some Japanese foods?
This is grated Chinese yam, or nagaimo in Japanese. Nagaimo are rich in amylase, an enzyme that helps to break down carbohydrates, and are often eaten raw. Amylase does not hold up well to heat, so be careful not to overcook these yams. The stickiness of these yams works to effectively break down and absorb proteins. So nagaimo have long been consumed to boost nutrition and to recover from fatigue.
These yams can be prepared in many different forms including grated, vinegared, cooked, fried and grilled. The yams may turn a brownish color left out after being cut and grated, but they can still be consumed. This discoloring can be avoided by adding a little vinegar water after cutting or by mixing in a little lemon juice after grating.
Your hands may become a bit itchy when preparing nagaimo. In this case, simply apply a little lemon juice to the irritated area. Or a little vinegar water can be applied before preparing the yams.
Chinese yams need to be stored away from direct sunlight, high temperatures and moisture. When storing cut yams, wrap the cut sections so they will not become dried out and then store them in the vegetable compartment of your refrigerator.

Taisho Nagaimo Yams from the Taisho Agricultural Cooperative Association in Obihiro, Hokkaido are fresh and white in color. Their texture is fine and very sticky. The flavor has plenty of body. A showering washer is used at our facility to provide clean yams with no scratches or damages. Nagaimo yams grown in Hokkaido have a good reputation overseas because of their color, shape and flavor. The Taiwan market in particular imports 2,600 tons of yams annually.

Hokkaido-Nagaimo
Yams are a food used for traditional medicine in China. It is known to be highly nourishing and to have a strong effect in promoting good digestion. Yams contain a great balance of mineral ingredients (zinc, potassium, iron, etc.) and vitamins C and B group. Furthermore, they contain many digestive enzymes, such as diastase.
