Nihon Cha - Japanese Tea The matcha tea used in the 'tea ceremony is the powder of high-quality Japanese green tea leaves, ground in a stone mill. It was traditionally treasured as a medicine.

Most Japanese tea is green tea, which is the drink that best accompanies Japanese cuisine. It is drunk unsweetened. Other than the matcha used for tea ceremony, Japanese green tea includes the high-class gyokuro, general-purpose sencha, and houjicha, which is steamed and roasted. Green tea drinks in cans and plastic bottles are increasingly common, and demand is rising, even in Japan-, particularly among young women concerned their health and beauty.

Green tea is often used in cuisine with expanding use as a new flavor in ice cream, cakes, tempura and other foods.

It includes high quantities of constituents such as catechin, tannin, vitamins and amino acids. Catechin is reported to induce apoptosis, which restricts cell multiplication, and so suppresses cancer. (Apoptosis: This refers to cell death due to a sequence of processes programmed into cell DNA. It is a natural process of the body, intended to eliminate unnecessary or abnormal cells.) On December 20, 2007, a Japan Public Health Center-based Prospective Study reported that green tea reduces the onset of symptoms in progressive prostate cancer.

Light, heat, humidity and odor harm green tea. The leaves should be sealed as well as possible against contact with the air, and stored in a cool place. Refrigerator storage is not advisable, due to the presence of other odors and humidity.

How to Serve Green Tea:
For Restaurant Owners
Use the following recipe to make one quart of Sencha in a pitcher.
Use approximately 7 grams of our Sencha loose leaf tea, or one of our 5 gram Sencha tea bags.
Add one quart of hot water, ideally between 160F to 190F depending on your preference.
The tea leaves or tea bags don't need to be removed. Our tea will never get too bitter.
