Nagaimo (Chinese Yam)

Nagaimo - Grated Chinese yamHave you ever seen a sticky, white looey paste used on some Japanese foods?

This is grated Chinese yam, or nagaimo in Japanese. Nagaimo are rich in amylase, an enzyme that helps to break down carbohydrates, and are often eaten raw. Amylase does not hold up well to heat, so be careful not to overcook these yams. The stickiness of these yams works to effectively break down and absorb proteins. So nagaimo have long been consumed to boost nutrition and to recover from fatigue.

These yams can be prepared in many different forms including grated, vinegared, cooked, fried and grilled. The yams may turn a brownish color left out after being cut and grated, but they can still be consumed. This discoloring can be avoided by adding a little vinegar water after cutting or by mixing in a little lemon juice after grating.

Your hands may become a bit itchy when preparing nagaimo. In this case, simply apply a little lemon juice to the irritated area. Or a little vinegar water can be applied before preparing the yams.

Chinese yams need to be stored away from direct sunlight, high temperatures and moisture. When storing cut yams, wrap the cut sections so they will not become dried out and then store them in the vegetable compartment of your refrigerator.

Yams contain a great balance of mineral ingredients (zinc, potassium, iron, etc.) and vitamins C and B group. Furthermore, they contain many digestive enzymes, such as diastase. Yams also contain a nutrient called Mucin which gives it its distinctive mucilaginous texture. Mucin is a glycoprotein and a fibrous biopolymer, and works to activate cells in the body It increases metabolism, prevents aging, heals dry rough skin, helps with recovery from fatigue, relieves constipation, and has beneficial dietary effects.
